Over de wijn:
Als er één manier is om Sherry weer op de kaart te zetten, dan is het deze. En nee, Bodegas Campestral maakt geen Sherry, maar heeft wél de winnende formule gevonden om het stoffige wijnzuiden van Spanje nieuw leven in te blazen. De broers Sergio en Andrés Troya maken sinds 2014 low-intervention-wijnen in Cádiz, op basis van alle ingrediënten die de Sherrystreek zo beroemd maakt. Dat begint bij de ondergrond, Albariza: de helwitte, poreuze krijtbodem met zijn droge korst. Dan is er de rijping op flor, een gistlaag die de wijn beschermt en zijn specifieke smaak geeft. Heeft deze Bajo Velo de Flor liefst veertien maanden gehad. Ten slotte, de lokale palominodruif. Krijg je een witte wijn die ruikt naar vuurwerk, naar citroen, reine claude en grapefruit. Onverwacht zacht in de mond, met een hartigheid die roept om: eten! Het mooie, bijna alles past. A la mesa.

Certified organic (Ecocert, CAAE). 100% Palomino aged under flor and made with minimal intervention and very low added sulphites. Unfined and unfiltered.
Smoky nose, a bit like the smell of fireworks. Bright, bright lemon and greengage fruit with white grapefruit – pith, peel and juice – bursting in on the finish. This is gorgeous. Masses of yellow citrus zest and a herbiness that takes me to crushed lemon thyme and lemongrass. There is a smoothness to the texture, but not a polished or hard smoothness; more like shantung silk pulled tight over a curve. The end is so salty and substantial that it feels like a mouthful of freshly made focaccia. Really, really exciting. The food-pairing potential for this wine is endless. Start with Spanish tortilla.
